Dairy Processors

Canadian dairy processors are manufacturers of dairy products and ingredients made essentially from milk.

The Canadian dairy processing sector employs over 26,000 people and delivers a vast array of both traditional and specialty dairy products worth billions of dollars each year into the Canadian marketplace.

The manufacture and use of Canadian dairy ingredients in the Special Milk Class Permit Program (SMCPP) in 2011 represented the equivalent of 7.1 million hectolitres of milk or 13.7% of industrial milk production. In 2010-2011, Canadian food processors used over 29.2 million kg of cheese, 16.9 million litres of cream and 11.1 million kg of skim milk powder in their food recipes under the SMCPP. Not to mention the many other dairy ingredients such as butter, liquid whole milk and custom dairy blends that were also incorporated in such items frozen desserts, prepared entrées, pancake mixes and food dips.
